Our early summer wine dinner was an outstanding success. We featured wines from Feudi di San Gregorio. The food was delicious and paired well with the selected wines. Below is the dinner menu and wines that accompanied each course.

Assorted Pecorino Cones with Smoked Salmon and Cream Cheese, Olive Salad and Mascarpone , Peperonata and Ricotta and Steak Salad and Blue Cheese, Potato and Basil wrapped Tuna Loin with Citrus Aioli, Apple Wood Smoked Bacon wrapped Shrimp with a fiery Tomato Sauce, Baked Oysters stuffed with Pancetta and Spinach, Salami Board with Red Onion Jam and Cannellini Bean Salsa, Parmigiano-Reggiano Cheese with Truffle Honey.
Accompanied by Feudi Di San Gregorio Falanghina 2007 and Dubl Sparkling Wine

Black Cod with Risotto Two Ways
Oven Roasted Black Cod with Laughing Bird Shrimp Sauce, Cauliflower Cooked Risotto Style and Black Risotto with Beet Micro Greens.

Spring Tagliatelle Ragu
Spring Lamb Ragu with Fresh Fava Beans, Peas, Wild Spring Onions served on Fresh Spinach Tagliatelle with Shaved Ricotta Salata Cheese.

Baby Green and Cannellini Bean Salad
Lola Rosa, Baby Oak Baby Red Romaine Lettuce, Tossed with Cannellini Beans, Varano's Duck Prosciutto, Pickled Red Onions, Tuscan Olives, Heirloom Tomato with Fig Balsamic Vinaigrette, Shaved Asiago and Home made Grissini.

Bacon Wrapped Beef Tenderloin
Grilled Pancetta Wrapped Beef Tenderloin, Topped with Broccoli Rabe Pesto and Broiled to a golden brown. Served with Porcini and Wild Mushroom Fregula and Port Wine Foie Gras Demi Glace.
